Our Summer Sausages are all beef unless otherwise noted. All Summer Sausages are a "Wisconsin Style" which means that they are fermented giving them a "tangy" flavor. We like a good amount of tang, and nice smoke flavor also. From start to finish in our smokehouses this takes over 24 hours for the flavors to develop!
